Le Rêve remains inspired by the patisseries of France

Since 2008, Le Rêve Patisserie & Café has been serving up classic French dishes and delectable pastries in the village of Wauwatosa.

Owned by Andy Schneider and Therese Hittman, the pair "both loved the European feel of the French patisseries and cafes in France," general manager Cat Yee Cramton said.

The location was used as a bank about 100 years ago. While remodeling the space, the owners discovered the original cream city brick and decided it would highlight the look they were going for.

"We kept the original tile on the first floor but had to replace the floors on our second level," Cramton said.

"The village of Wauwatosa is perfect for Le Rêve because of the people," she said. "We have a huge amount of regular guests that come in daily. They are absolutely wonderful. We are a small business and the community is great at supporting us."

Offering traditional French bistro food, the café's service begins at 8 a.m. It serves breakfast staples such as quiche, omelettes, crepes, and a variety of pastries until 11 a.m. Lunch begins with French onion soup, croque-monsieur or croque-madame sandwiches, burgers, salads and more.

At 5 p.m. the menu switches over to dinner, where diners find some of their favorite French dishes, including salade nicoise, fois gras, mussels, coq au Riesling (chicken with a Riesling juice), as well as a plats du jour. Le Reve also offers a menu of French tapas from 3 p.m. to 5 p.m. Monday through Friday.

One of the things that sets Le Rêve apart is that "We have a fantastic pastry case which features desserts we make in-house," said Cramton. All of their pastries are made by their pastry chefs.

"We try to use local ingredients whenever possible. We deal with local farms and go to the farmers markets. We house cure and smoke our salmon and duck. We pickle our vegetables and every sauce we have is made in the restaurant. We change our menu seasonally so that we can serve the freshest product possible. The chef loves creating new dishes."

For those looking for a unique cocktail, the front of the house staff have come up with some fantastic summer drinks that feature fresh fruits and purees.

"We have also recently collaborated with Anodyne Coffee Roasting Company on a second custom blend for the restaurant. We feature our Organic Le Rêve blend coffee in the restaurant and also sell it in 1lb bags. The second blend is only available for purchase in 1lb bags," Cramton said.

Le Rêve strives to offer something for everyone.

"We have families, business men, doctors that enjoy a light breakfast or a four-course dinner. Some folks stop in just to pick up desserts from our pastry case with a coffee to go."
